Chicken soup has several properties that make it useful in the treatment of certain illnesses. The lean protein in chicken and nutrients from added vegetables work to bolster your strength when your body is feeling drained of energy.

Below is the recipe for chicken Miso Soup with Rice and Noodles

Ingredients

For Broth :

3 dried shiitake mushrooms

3 dried oyster mushrooms

4 chopped mushrooms

1 tsp miso paste

4 tsp dark soy sauce

1 tbsp Sriracha

2 tsp rice vinegar

For Add-ons :

100 gms of chicken breast

2 hard boiled egg whites

1 tsp sesame oil

Handful rice noodles

4 thin slices of ginger

 

Preparation

Step 1

Start by reconstituting mushrooms in room temperature water for an hour. Additionally, boil 2 eggs, remove the shell and the yolk, and marinate it in 2 tsp of dark soy sauce, 1 tsp of sesame oil and a handful of spring onions. Ideally, these would remain in the marinade for an hour.

Step 2

Cook the chicken. Take a chicken breast. Pat dry with a paper towel and salt and pepper on both sides. This will help remove some of the water from the surface of the chicken. Place one side of the chicken onto the pan and cook until that side is golden brown. Flip the chicken and pour 1/2 cup of water, and wait for the other side to also get golden brown. Remove the chicken and shred into large pieces by using the fork. Reserve the water for the broth.

Step 3

Time for the broth. Put 1 cup of water in the pot along with 1 cup of water from the mushrooms. For more flavour, you can add water from the chicken breast also. Place on high heat, add garlic, ginger, mushrooms, soy sauce, sriracha and rice vinegar. Add 1 tsp of miso paste and mix well. Simmer for 10 mins. 

Step 4

Bring all the ingredients to your soup bowl. Start with a base of carrots and spring onions, shredded chicken, followed by a cup full of broth. Top with egg and salt.
